This International Standard specifies a method for the determination of the alkalinity of animal and vegetable fats
and oils without distinguishing between the various constituents. The method is not applicable to dry melted animal
fats, nor to oils and fats with an acidity greater than 60 % (mass fraction) as determined in accordance with
ISO 660.
NOTE Fats and oils can contain alkaline constituents either naturally (e.g. calcium soaps from bones) or accidentally (e.g.
sodium soaps in imperfectly refined fats and oils).
Diese Internationale Norm legt ein Verfahren zur Bestimmung der Alkalität von tierischen und pflanzlichen Fetten und Ölen ohne Unterscheidung zwischen den verschiedenen Bestandteilen fest. Das Verfahren ist nicht anwendbar auf Fette und Öle mit einer Acidität über 60 % (Massenanteil), bestimmt nach ISO 660:1996. Mit dem Verfahren kann nicht festgestellt werden, ob trockene geschmolzene tierische Fette mit alkalischen Lösungen behandelt worden sind oder nicht.
